  1. Regulation 178/2002:

All aspects of the food production chain must be taken into account, from production, transport, distribution to the supply of food. At all stages of this chain, legal responsibility for ensuring food safety stays with the company that owns the product.

Companies must be able to set up a rapid alert system towards the authorities and identify emergency and crisis management measures. To achieve these objectives, the traceability of foodstuffs is established at all stages of production and distribution.

  2. EC regulation n ° 852/2004:

Its objective is "to eliminate or reduce the risks associated with consumption, whether due to the products themselves or the operations carried out on these products".

The regulations do not provide any obligation of means but set the main principles: the obligation of result for food sector operators and the responsibility of professionals which must be exercised at two levels:

  • Control of the quality of inputs, in particular with regard to residues of phytosanitary products. The European Commission sets for all foodstuffs and any pesticide molecule a Maximum Residual Limit (MRL) which corresponds to the maximum concentration of pesticide residues legally tolerated in or on food or feed. Since September 1, 2008, date of entry into application of regulation 396/2005 / EC, the limits have been harmonized for all foodstuffs.

  • Respect for good hygiene practices  in the company (hygiene of premises, equipment, personnel, waste management, etc.) with the voluntary application of the Guide to Good Hygiene Practices.
